The leaves are changing and the weather is getting colder. That means it’s soup season! And tomato soup and grilled cheese is a classic cold-weather dinner idea. You can open a can of good old Campbell’s or try this easy homemade tomato basil soup recipe!

Easy Homemade Tomato Basil Soup
1/2 onion (diced)
1/4 c plain greek yogurt
2 cups chicken broth
10 Roma tomatoes (mine were small about 148 g total)
Basil and other seasonings to taste.
Saute onions in a pot until they start to get soft. Add chicken broth and tomatoes. *I like to slice the tomatoes in half and let the skins come off as they cook but then I realized that I blend everything so the skins can stay on. Add all ingredients into a blender (filled my Blendtec)
Serve with your favorite toppings. I personally love cheese or Goldfish. Green onions, crackers, side of grilled cheese. Grilled chicken is good too! I actually added some leftover shredded chicken straight into the soup.
PS After I realized I could have just add all of the ingredients to the blender then warmed it up in a pot.
PPS Or you can do it the true Blendtec way and use hot water instead of chicken broth and the Blendtec will do the rest. You live and you learn.
